  • 2cups vegetable juice
  • 2cups cucumber, peeled, seeded and sliced
  • 1cup plain Stonyfield Yogurt
  • 3scallions, chopped
  • 1/2cup parsley, chopped
  • 1/2jalapeno, seeded, chopped
  • 2cloves garlic
  • 1/2teaspoon salt
  • 1/2teaspoon black pepper
  • 2tablespoons lemon juice
  • 1orange pepper, seeded, small diced
  • 1yellow pepper, seeded, small diced
  • 2tomatoes, seeded, small diced
Creamy Gazpacho Soup


  • 1Combine 1 cup of cucumber, scallions, parsley, jalapeno, garlic, salt, pepper and lemon juice in a food processor and pulse until well chopped.
  • 2Add vegetable juice and yogurt, pulse until ingredients are well blended, while leaving some texture to the vegetables.
  • 3Transfer mixture to a large soup bowl.
  • 4Add peppers, tomatoes and remaining cup of cucumber. Stir well.
  • 5Taste and season with additional salt and pepper if necessary. Serve chilled and topped with a dollop of plain yogurt and fresh parsley.
  • 6Gazpacho is best if made and served the same day.
